A Texas Hill Country Gem: The Nest

The Nest is a beautiful restaurant located in the small town of Fredericksburg, Texas.

If you are visiting the Texas Hill Country, be sure to save an evening for The Nest (you’ll need a reservation) as you won’t want to miss the experience. We’ve dined here on several occasions over the years and the quality has never faded. One memorable visit included former First Lady “Lady Bird” Johnson at the next table with her family.

The Nest is located in a converted historic home, the ambiance is cozy and comfortable with a charming atmosphere. There are typically no more than 4 tables in any given room, but it never feels crowded. And the food is spectacular.

The grilled escargot appetizer is amazing and very different from how it is usually prepared. It is blackened with a wonderful flavor, and served on top of a bed of tortilla strips in a martini glass.

The rack of lamb and the roasted chicken were both wonderfully prepared and remain our favorite picks on the menu.

There are other wonderful entrée selections that include steaks and seafood options that look equally delicious. For us, the escargot appetizer was totally crave-able. We’ve found ourselves trying to coordinate area trips based on “how far is that from the Nest”.

The wine list is appropriate to the cuisine with many choices. They have a full bar, so classic cocktails and tasty martinis are not a problem and were enjoyed by the table. The desserts are also a hit – be sure to try the profiteroles.  And despite being in a small Texas town and employing many local students, the service is on par.

The owner and Chef John Wilkinson graduated from the Culinary Institute of America in Hyde Park, New York.

He traveled around the world expanding his experiences and worked as a Banquet Chef at the Ritz Carlton in Aspen, Colorado. In 1995 he and his wife Monica decided to open The Nest in Fredericksburg.This is a gem of a restaurant that I will always visit when we are in town.
