Homemade Pasta from Emilia-Romagna

Homemade Pasta is a great way to turn your Italian Dishes into something special.

This is a classic homemade pasta from Emilia-Romagna which calls for just 3 ingredients: Flour, Eggs, and a little Salt. Other regions of Italy use water, milk and oil but we will get to those recipes later!

It’s perfect for ravioli, tortellini, and lasagna sheets.

Homemade Pasta Recipe: 

The egg to flour ratio is based on how many servings you will need.

To Serve 3-4
2 large eggs, 1 teaspoon of salt
1 cup of all-purpose flour

To Serve 4-6
3 large eggs, 1 teaspoon of salt
1 1/2 cups of all-purpose flour

To Serve 6-8
4 large eggs, 2 teaspoons of salt
2 cups of all-purpose flour

How to Prepare: by Hand

1. Place the flour in a wide bowl and make a well in the center.
2. Break the eggs into the well and add the salt.
3. Start beating the eggs with a fork gradually pulling the flour in from the well.
4. As the mixture thickens, place the fork aside and use your hands to continue mixing.
5. Pull in as much flour as you can until it starts to form a lumpy ball.
6. If it is still sticky add flour to your hands and smooth it into a ball.
7. On a floured clean counter knead the dough for about 5 minutes.
8. Wrap in plastic wrap and set aside for 1 hour to rest.

How to Prepare: by Stand Mixer

1. In a motorized mixer, use the paddle attachment on the lowest setting.
2. Add the flour, salt, and eggs.
3. Slowly increase the the speed as the flour and eggs start to mix.
4. Mix for several minutes or until the dough begins to pull away from the sides.
5. Remove and knead by hand for 2 to 3 minutes.
6. Wrap in plastic wrap and set aside for 1 hour to rest.

You can use a Stand Mixer Pasta Attachment or the Manual Pasta Machine.

They both have the same exact process it’s just one is manual and the other is a machine. I do like to use the machine attachment for my stand mixer it cuts my time in half.

How to Roll Pasta: by Stand Mixer Pasta Attachment

1. Next setup your stand mixer with the pasta attachment.
2. Tear off a piece of the dough and roll into a ball, like a large meatball.
3. Flatten it out into a disc and then roll it the pasta attachment from setting 1 to 5 or until it’s thin enough to see through.
4. Lay the finished sheets of pasta on a clean floured surface so it doesn’t stick.

How to Roll Pasta: by Hand Crank Pasta Machine

1. Setup your hand crank pasta machine on the edge of the counter making sure it is secure.
2. Tear off a piece of the dough and roll into a ball, like a large meatball.
3. Flatten it out into a disc and then roll it through your pasta machine or stand mixer pasta attachment from setting 1 to 5 or until it’s thin enough to see through.
4. Lay the finished sheets of pasta on a clean floured surface so it doesn’t stick.

    The bread turned out great, my Mother would be be proud, and the seed cookies,also fantastic. I must admit, I made a adjustment to the recipe, I added 1/3 cup of red wine,wow wow, .

    Can you add some semolina flour for this recipe?

      Hi Carolyn, yes you can blend in semolina flour for the pasta.
