Try this Burrata Appetizer at your next Gathering.

It’s always good to have a no fuss appetizer that’s beautifully plated. If you’re not familiar with Burrata your going to love it. Burrata means ‘buttered’ in Italian.  It’s a delicate buttery cheese that’s perfect for appetizers or pasta dishes. The outer shell is mozzarella and inside you will find a creamy soft cheese. I absolutely love it paired with caramelized apricots and brandy. The pine nuts add another level of butteriness that creates a show stopper appetizer that people will love.

Burrata has a rich, milky, buttery flavor that’s perfect for salads, crusty bread, prosciutto, fresh tomatoes, or simply with olive oil and cracked pepper. Place it on top of pasta dishes to add a touch of creaminess. Burrata is a typical cheese from the Murgia region of Southern Italy. It’s best served fresh at room temperature.


Ingredients

Scale

Brandy 150 ml
Sugar 2 tbsp
Shallot, 1 peeled and sliced into rings
Dried Apricot, 5 each diced
Pine nuts 1 tbsp, toasted
Burrata 2 medium (or 1 large)
Arugula, a few sprigs for garnish
Crusty bread to serve


Instructions

Heat the brandy and sugar in a small pan until the sugar has dissolved. Add the shallots and diced apricot. Simmer for a few minutes until it starts to thicken. Take off the heat and let it cool.

Spoon the mixture around a serving platter. Place the Burrata on the platter and sprinkle pine nuts evenly around the plate. Garnish with arugula and serve with crusty bread.
