Mascarpone stuffed apricots are a great addition to your charcuterie or dessert tray.
Apricots are very popular in the Mediterranean and used in savory and sweet dishes. Mascarpone is a creamy Italian cheese that you will find in desserts like tiramisu.
They are simple to make and require just a few things to assemble. I like to drizzle honey over the apricots but you can also use a simple syrup as well.
